For the Coconut Rice:
• 1 batch coconut rice (made with jasmine rice, coconut milk, sea salt, and a pinch of sugar)
For the Ginger Lime Pork:
• 1 Tbsp olive oil
• 3 scallions, thinly sliced (separate white and green parts)
• 4 cloves garlic, minced
• 1 ½ Tbsp fresh ginger, minced or grated
• 1 ½ lbs ground pork
• ⅓ cup packed light brown sugar
• 3 Tbsp lime juice
• 1 Tbsp sriracha (or adjust to taste)
• Sea salt and freshly ground black pepper, to taste
• Toppings: chopped peanuts, lime wedges, chopped fresh herbs (cilantro, mint, Thai basil)
Prepare the coconut rice first, following your preferred method or recipe. Set aside and keep warm.
Heat olive oil in a large sauté pan over high heat. Add the white parts of the scallions, garlic, and ginger; sauté for 1–2 minutes until fragrant.
