Slow Cooker Cowboy Sandwiches are a hearty and flavorful meal that combines tender, slow-cooked beef with savory toppings. This dish is perfect for gatherings, game days, or a comforting family dinner. The combination of beef, bacon, cheese, and crispy fried onions creates a sandwich that's both satisfying and delicious.
Ingredients:
3 lbs chuck roast
2 cups BBQ sauce
1 lb bacon, cooked and crumbled (reserve half for topping)
1 large onion, sliced
2 tablespoons Worcestershire sauce
3 cloves garlic, minced
1/4 cup brown sugar
1 (4 oz) can diced jalapeños
6 hamburger buns
Colby Jack cheese slices
1 cup crispy fried onions
Directions:
Place the chuck roast in the slow cooker.
Add BBQ sauce, half of the cooked and crumbled bacon, sliced onion, Worcestershire sauce, minced garlic, brown sugar, and half of the diced jalapeños to the slow cooker.
Cover and cook on low for 6–8 hours or on high for 4–6 hours, until the beef is tender and easily shredded with a fork.
Remove the beef from the slow cooker and shred it using two forks.
Drain most of the liquid from the slow cooker, reserving about a cup. Return the shredded beef to the slow cooker and mix well to combine with the remaining sauce.
To assemble the sandwiches, place a slice of Colby Jack cheese on the bottom half of each hamburger bun.
Top with a generous portion of the shredded beef mixture.
Sprinkle with the reserved crumbled bacon, remaining diced jalapeños, and crispy fried onions.
Place the top half of the bun over the toppings.
Serve immediately and enjoy!
