Ingredients:
6 bone-in, skin-on chicken thighs
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
1/2 cup dried figs, chopped
1/2 cup balsamic vinegar
1/4 cup chicken broth
2 tablespoons honey
3 cloves garlic, minced
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Directions:
Preheat oven to 400°F (200°C).
Season chicken thighs generously with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs, skin side down, and sear until golden brown and crispy, about 5-7 minutes. Flip and cook for another 3 minutes. Remove chicken and set aside.
In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
Add chopped figs, balsamic vinegar, chicken broth, honey, and thyme. Stir and bring to a simmer.
Return chicken thighs to the skillet, skin side up. Spoon some glaze over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze is thickened.
Remove from oven and spoon more glaze over the chicken before serving.
