It’s easy to make and packed with satisfying flavors everyone will enjoy.
Ingredients:
4 boneless, skinless chicken breasts
1 cup long-grain rice (uncooked)
2 cups chicken broth
1/2 cup BBQ sauce
1/4 cup honey
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 tablespoon chopped fresh parsley (for garnish)
Directions:
Cook the Rice:
In a medium pot, bring the chicken broth to a boil. Add the rice, cover, and reduce the heat to low. Simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
Prepare the Chicken:
While the rice is cooking, season the chicken breasts with garlic powder, onion powder, salt, and pepper.
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, lower the heat and add the BBQ sauce and honey. Stir to combine and bring to a simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Assemble the Dish:
Slice the cooked chicken into strips and return it to the skillet, tossing it in the honey BBQ sauce to coat.
Serve:
Spoon the cooked rice onto plates, top with the honey BBQ chicken, and drizzle extra sauce over the top. Garnish with chopped fresh parsley and serve immediately.
