Ingredients:
4 large croissants, split
8 slices cooked bacon
4 large eggs
4 slices cheddar cheese
2 tablespoons Dijon mustard
2 tablespoons maple syrup
1 tablespoon butter
Salt and pepper, to taste
Optional: fresh spinach or arugula for garnish
Directions:
In a small bowl, whisk together Dijon mustard and maple syrup to create the maple mustard sauce. Set aside.
Heat butter in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (fried, scrambled, or over-easy). Season with salt and pepper.
While the eggs cook, slice the croissants in half and toast lightly.
Spread a generous layer of the maple mustard sauce on the cut sides of each croissant.
