Ingredients:
2 pounds beef sirloin or flank steak, sliced thinly
3 bell peppers (red, green, and yellow), sliced
1 medium onion, sliced
3 cloves garlic, minced
1/2 cup beef broth
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon ground black pepper
2 tablespoons vegetable oil
Directions:
Heat vegetable oil in a skillet over medium-high heat. Add the sliced beef and sear until browned on all sides, about 2-3 minutes. Remove and set aside.
In the crockpot, combine the beef broth, soy sauce, oyster sauce, brown sugar, minced garlic, and black pepper. Stir well.
Add the browned beef, sliced bell peppers, and onions to the crockpot. Stir to coat everything evenly.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and peppers are cooked but still crisp.
About 15 minutes before serving, mix cornstarch with water to create a slurry. Stir the slurry into the crockpot to thicken the sauce. Cover and cook on high for the remaining time.
Serve hot over steamed rice or noodles.
