I am a huge Star Wars Fan. In my adventure stories (the adventure stories among my histories), I have used the original Star Wars trilogy as my model and inspiration when I am unsure of how to treat the story from history as a story.
This is what is canon in Star Wars for me:
The core: the original trilogy
Anything else Star Wars you identify with or love
This is my 'Recommended Reading/Watching' list, from which to make up the rest- or not, and just leave it at the original trilogy:
Solo
Rogue One
Anything published officially in book form from the Timothy Zahn Heir to the Empire trilogy that was published before the New Jedi Order, including (on faith, since I have not read these), the X Wing novels at least through Isard's Revenge (and probably the whole series, since the last books are from the same authors)
Star Wars: Republic Commando, Star Wars: TIE Fighter, and Knights of the Old Republic (I include these on faith, based on reviews and their reputation; I have faith in your judgement of these beloved games!)
With a special place of reverence, alongside George Lucas, for the founder of the tradition of the 90's Star Wars novels, Timothy Zahn!

Any Star Wars comics, video games, or animated television shows unconnected to the Disney Star Wars movies or the New Jedi Order timeline, including potentially games based on the 90's Star Wars novels (or based solely on the original 6 movies) created since New Jedi Order that do not reference anything actually in or derived from New Jedi Order (including New Jedi Order's timeline)
I have very little experience with these, but what little I have experienced (with a few Star Wars comics) was more than wonderful enough to be canon. You decide. You have more experience with these than I do. If my experience is typical, though, these should definitely be canon as well.
Any later Star Wars books written by Timothy Zahn. (none of the other major authors from the 90's have written major Star Wars books since then, but he has!)
The Prequel Trilogy
These are to be banished to the outer darkness and forgotten (at least in the household/Jedi monastic cell of David S. Annderson):
The sequel trilogy
The New Jedi Order books
The Star Wars books of the 90's, on the other hand, those are core canon as much as anything outside the original trilogy is, for me.
And, I have no doubt, are surely a major influence on me as an author, since several of them were (and still are) among my favorite books for a long time in my early adulthood.
Anyway, that is what is recommended in Star Wars for David S. Annderson!
