These Crispy Feta Fried Eggs offer a delightful twist on traditional fried eggs. By crumbling feta cheese into the pan, it melts and crisps up around the egg, creating a golden, cheesy crust. Topped with fresh avocado, a squeeze of lemon juice, and garnished with pickled onions, this dish is both flavorful and satisfying.
1 large egg
¾ oz (20g) feta cheese
1 small tortilla or slice of toasted bread
¼ avocado
Dried oregano
Red pepper flakes (optional)
Cooking oil spray or olive oil spray
Lemon juice
Pickled onions (for garnish)
Chili oil (optional, for drizzling)
Prepare the Pan:
Lightly spray a small fry pan with cooking oil. Crumble the feta cheese into the pan, ensuring it covers the outer edge.
Cook the Feta:
Sauté the crumbled feta over medium heat for a couple of minutes until it begins to melt and turn golden brown.
Add the Egg:
Gently crack the egg into the center of the pan, directly over the melted feta.
Season:
Sprinkle the egg with dried oregano and red pepper flakes, if using. Allow the egg to cook to your desired doneness.
Prepare the Base:
While the egg is cooking, warm the tortilla on a gas stove, in the oven, or in the microwave. Smash the avocado onto the tortilla and drizzle with a squeeze of lemon juice.
Assemble:
Once the egg is cooked and the feta has formed a crispy crust, carefully remove it from the pan and place it on top of the prepared tortilla.
Garnish and Serve:
Top the egg with pickled onions and drizzle with chili oil, if desired. Serve immediately and enjoy!
