For the Chicken:
500g boneless chicken breast, cut into thin strips
1 egg white
100g cornflour (cornstarch)
For the Marinade:
1 tablespoon dark soy sauce
1 teaspoon garlic and ginger paste
1 teaspoon sesame oil
1 teaspoon sugar
½ teaspoon white pepper
For the Stir-Fry Sauce:
2 tablespoons honey
1 tablespoon lemon juice
1 tablespoon dark soy sauce
1 tablespoon sriracha sauce
For Garnish:
2 spring onions (scallions), chopped
Marinate the Chicken: In a mixing bowl, combine the chicken strips with the marinade ingredients. Mix well to ensure all pieces are coated. Let it rest for at least 10 minutes.
Prepare the Coating: Add the egg white to the marinated chicken and mix thoroughly. Then, sprinkle the cornflour over the chicken and toss until each piece is evenly coated.
Fry the Chicken: Heat oil in a wok or frying pan to 180°C (350°F). Fry the coated chicken pieces in batches for 1 to 2 minutes until lightly golden. Remove and set aside. For extra crispiness, return the chicken to the oil and fry for an additional 2 to 3 minutes.
