1½ pounds boneless chicken thighs or breasts, diced
½ teaspoon garlic powder
½ teaspoon Italian seasoning
1 teaspoon kosher salt
¼ teaspoon ground black pepper
3 tablespoons unsalted butter
½ medium yellow onion, small-diced
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 cup jasmine or white long grain rice (uncooked)
2½ cups chicken broth
½ cup heavy cream
¾ cup freshly grated Parmesan cheese

Season the Chicken: In a bowl, season the diced chicken with garlic powder, Italian seasoning, salt, and pepper.
