Ingredients:
1 medium zucchini, sliced into thin strips
1 medium red bell pepper, sliced
1 medium yellow bell pepper, sliced
1 small red onion, thinly sliced
1 cup mushrooms, sliced
2 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon garlic powder
4 large whole wheat tortillas or wraps
½ cup hummus (any flavor)
1 cup fresh spinach or mixed greens
¼ cup crumbled feta cheese (optional)
2 tablespoons balsamic glaze (optional)
Directions:
Preheat a grill or grill pan over medium-high heat.
In a large bowl, toss zucchini, bell peppers, onion, and mushrooms with olive oil, salt, black pepper, and garlic powder until evenly coated.
Grill the vegetables for 4–6 minutes per side or until tender and lightly charred. Remove from the grill and let cool slightly.
Lay out each tortilla and spread about 2 tablespoons of hummus evenly over the surface.
Arrange a portion of grilled vegetables on top of the hummus, then add fresh spinach or mixed greens. Sprinkle with feta cheese and drizzle with balsamic glaze if using.
