Ingredients:
1 cup milk
1/2 cup fine dry breadcrumbs
1 large onion, finely chopped
1 large carrot, peeled and grated
2 tablespoons olive oil
3 pounds ground beef (80% lean)
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons Dijon mustard
2 large eggs
1/4 cup ketchup (plus extra for topping)
2 tablespoons Worcestershire sauce
1/4 cup finely chopped fresh parsley
Directions:
Preheat your oven to 350°F (175°C).
In a small bowl, combine the milk and breadcrumbs; let soak for 5 minutes.
Heat the olive oil in a skillet over medium heat. Add the onion and carrot, and cook until soft, about 5 minutes. Remove from heat and let cool slightly.
In a large bowl, combine the ground beef, soaked breadcrumbs, cooked vegetables, salt, pepper, Dijon mustard, eggs, ketchup, Worcestershire sauce, and parsley. Mix gently until just combined do not overmix.
Transfer the mixture to a loaf pan or shape it into a loaf on a rimmed baking sheet.
Spread a thin layer of ketchup over the top of the meatloaf.
Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
