Shrimp Scampi is a timeless Italian-American dish that combines tender shrimp with a garlic butter and white wine sauce, served over pasta or with crusty bread. This recipe delivers a flavorful, easy-to-make meal perfect for any night of the week, balancing rich buttery flavors with the brightness of lemon and parsley.
Ingredients:
1 pound large shrimp, peeled and deveined
8 ounces linguine or spaghetti
4 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
Juice of 1 lemon (about 2 tablespoons)
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped
Grated Parmesan cheese (optional, for serving)
Directions:
Cook pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup pasta water.
In a large skillet over medium heat, melt 2 tablespoons butter with olive oil. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant but not browned.
Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes per side until shrimp turn pink and are cooked through. Remove shrimp from the skillet and set aside.
Pour the white wine into the skillet and bring to a simmer, scraping up any browned bits from the bottom. Let it reduce slightly for about 2 minutes.
Stir in the remaining 2 tablespoons of butter and the lemon juice until the butter melts and the sauce is smooth.
Return the shrimp to the skillet and toss to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time to loosen it.
Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
Sprinkle with fresh parsley and serve immediately, with Parmesan cheese on the side if desired.
