1 pound boneless, skinless chicken breasts (1–1½ inches thick)
1 teaspoon ground cumin
1 teaspoon smoked or sweet paprika
1 teaspoon dried oregano
½ teaspoon cayenne pepper (adjust to taste)
1 teaspoon salt (or to taste)
¼ teaspoon freshly ground black pepper (or to taste)
3 tablespoons olive oil, divided
1 small yellow onion, finely diced
3 cloves garlic, minced
2 cups diced tomatoes (or 1 can, 14 ounces, well-drained)
14 ounces canned unsweetened, lite coconut milk

Prepare the Chicken: Pat dry the chicken breasts with paper towels. In a small bowl, combine cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Rub this seasoning mixture evenly over the chicken breasts.
