Full Recipe:
2 lbs boneless, skinless chicken breasts or thighs
1/2 cup low-sodium soy sauce
1/3 cup honey
1/4 cup ketchup
1/4 cup bourbon whiskey
2 tablespoons olive oil
1 tablespoon minced fresh ginger
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (adjust to taste)
1 teaspoon cornstarch
2 tablespoons water
Salt and pepper, to taste
Cooked rice, for serving
Prepare the Sauce: In a medium bowl, whisk together the soy sauce, honey, ketchup, bourbon, olive oil, minced ginger, garlic, and red pepper flakes until well combined.
Combine with Chicken: Place the chicken breasts or thighs into the slow cooker. Pour the prepared sauce over the chicken, ensuring all pieces are well-coated.
Cook: Cover and cook on low for 5–6 hours, or on high for 2.5–3 hours, until the chicken is fully cooked and tender.
Thicken the Sauce: Remove the chicken from the slow cooker and set aside. In a small bowl, mix the cornstarch with water to create a slurry. Pour the slurry into the sauce in the slow cooker and stir well. Cover and cook on high for an additional 30 minutes, or until the sauce has thickened to your desired consistency.
Shred the Chicken: Shred the cooked chicken using two forks and return it to the slow cooker, stirring to combine with the thickened sauce.
Serve: Serve the bourbon chicken over cooked rice and garnish with sliced green onions.
