Zuppa Toscana, meaning "Tuscan soup" in Italian, is a hearty and comforting dish that originated in the hills of Tuscany. Traditionally, it combines kale, Italian sausage, potatoes, and heavy cream in a savory chicken broth. This soup has gained popularity worldwide, especially in the United States, where it's often featured in Italian-American restaurants. Its rich flavors and satisfying ingredients make it a perfect meal for chilly evenings.
1 lb Italian sausage (mild or spicy)
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
4 medium potatoes, diced (Yukon Gold or red)
2 cups kale, chopped
1 cup heavy cream
Salt and pepper to taste
Optional: red pepper flakes for added heat
Brown the Sausage:
In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart as it cooks.
Once browned, remove the sausage and set it aside.
Sauté Onions and Garlic:
In the same pot, add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and sauté for an additional minute until fragrant.
Add Broth and Potatoes:
Pour in the chicken broth and add the diced potatoes.
Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
Incorporate Sausage and Kale:
Return the browned sausage to the pot.
Add the chopped kale and cook until it wilts, about 5 minutes.
Finish with Cream:
Stir in the heavy cream and season with salt and pepper to taste.
Allow the soup to heat through before serving.
