These delightful apple cupcakes are a fun and creative way to celebrate the start of the school year or any occasion that calls for a sweet treat. For the Cupcakes:
1 box of spice cake mix
3 large eggs
½ cup vegetable oil
1 cup apple pie filling
1 teaspoon vanilla extract
For the Frosting
1 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Red and green food coloring
For Decoration:
Tootsie Rolls (for stems)
Green Airheads (for leaves)
Gummy worms (optional, for added fun)
Preheat the Oven: Set your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners and set aside.
Prepare the Cupcake Batter: In a large mixing bowl, combine the spice cake mix, eggs, vegetable oil, apple pie filling, and vanilla extract. Mix until well combined.
Fill the Cupcake Liners: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake: Place the muffin tin in the preheated oven and bake for 16–19 minutes, or until a toothpick inserted into the center comes out clean.
Cool the Cupcakes: Remove the cupcakes from the oven and allow them to cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely.
Prepare the Frosting: In a medium bowl, beat the softened butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract, and continue to beat until the frosting is light and fluffy
Color the Frosting: Divide the frosting into two bowls. Add red food coloring to one bowl and green food coloring to the other, mixing until the desired colors are achieved.
Frost the Cupcakes: Using a spatula or piping bag, frost each cupcake with the red frosting to resemble an apple.
Decorate: For each cupcake, place a Tootsie Roll at the top center to serve as the stem. Cut the green Airheads into leaf shapes and attach them next to the stem. Optionally, place a gummy worm around the stem for added decoration.
