Ingredients:
12 ounces of pasta (such as rotini or bowtie)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup red bell pepper, chopped
1/2 cup sweet corn (fresh or frozen)
1/4 cup red onion, finely chopped
1/4 cup black olives, sliced
1/4 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
For the Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic powder
Salt and pepper to taste
Directions:
Cook the pasta according to package instructions. Drain and set aside to cool.
