1¼ cups all-purpose flour
¼ cup granulated sugar
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1¼ cups milk
¼ cup vinegar
¼ cup vegetable oil
1 large egg
Optional mix-ins: blueberries, chocolate chips, diced bananas, or chopped strawberries
Preheat the Oven: Set your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray.
Prepare Wet Ingredients: In a bowl, combine milk and vinegar. Let it sit for about 5 minutes to curdle slightly. Then, beat in the oil and egg until well combined.
Mix Dry Ingredients: In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Add Mix-ins: Gently fold in your chosen mix-ins, if using.
Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake: Place the tin in the preheated oven and bake for 8-10 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the poppers to cool slightly before removing them from the tin. Serve warm with maple syrup, powdered sugar, or fresh fruit.
