Full Recipe:
3 ripe bananas (approximately 1½ cups mashed)
½ cup unsalted butter, melted
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup mini chocolate chips (plus extra for topping)
Preheat Oven: Set your oven to 325°F (165°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mash Bananas: In a large bowl, peel and mash the ripe bananas until mostly smooth, leaving a few lumps for texture.
Combine Wet Ingredients: Stir the melted butter into the mashed bananas. Then, whisk in the sugar, eggs, and vanilla extract until the mixture is smooth and creamy.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
Add Chocolate Chips: Fold in the mini chocolate chips, ensuring they're evenly distributed throughout the batter.
Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Sprinkle additional chocolate chips on top if desired. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
