Full Recipe:
4 large plain bagels
2 large eggs
6 tablespoons heavy cream
½ cup cooked and crumbled bacon
2 cooked pork sausages, meat removed from skin and crumbled
½ small red onion, finely diced
⅓ cup shredded cheddar cheese
Fresh chives, chopped (for garnish)
Salt and black pepper, to taste
Ketchup or sriracha, for serving
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Slice a thin sliver off the top of each bagel.
Use a knife to carefully run around the center of each bagel, creating a well without cutting all the way through.
Gently press the center of the bagel to the edges to create space for the filling.
In a large bowl, whisk together the eggs and heavy cream until smooth.
Add the crumbled bacon, sausage, diced onion, shredded cheddar cheese, salt, and pepper to the egg mixture.
Spoon the filling evenly into each prepared bagel.
Place the filled bagels on the prepared baking sheet.
Bake for 15 minutes, or until the bagels are crispy and the filling is set.
Remove from the oven and let cool slightly.
Garnish with chopped chives and serve with ketchup or sriracha on the side.
