Full Recipe:
1 pound large shrimp, peeled and deveined, tails on
1/2 cup all-purpose flour
2 large eggs
1 cup shredded sweetened coconut
1/2 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/4 teaspoon ground white pepper
Vegetable oil, for frying
Lime wedges, for serving
Prepare the Shrimp: Pat the shrimp dry with paper towels.
Set Up Breading Stations:
In a shallow dish, place the all-purpose flour.
In another shallow dish, beat the eggs.
In a third shallow dish, combine the shredded coconut, panko breadcrumbs, salt, and white pepper.
Coat the Shrimp:
Dredge each shrimp in the flour, shaking off excess.
Dip into the beaten eggs, allowing excess to drip off.
Roll in the coconut-panko mixture, pressing gently to adhere.
