1 lb boneless, skinless chicken thighs (or breasts)
1 cup long-grain white rice
2 cups chicken broth
½ cup BBQ sauce
¼ cup honey
1 tablespoon soy sauce
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Optional: chopped green onions or parsley for garnish
Preheat Oven: Set your oven to 375°F (190°C).
Prepare Sauce: In a bowl, mix together honey, BBQ sauce, soy sauce, and minced garlic until smooth.
Season Chicken: Season the chicken thighs with salt and pepper.
Sear Chicken: In a skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 5–7 minutes.
Combine Chicken and Sauce: Remove the chicken from the skillet and set aside. In the same skillet, add the rice and toast lightly for 1–2 minutes.
Add Broth and Sauce: Pour in the chicken broth and the prepared sauce. Stir to combine.
Return Chicken: Place the seared chicken on top of the rice mixture.
Bake: Cover the skillet and transfer it to the preheated oven. Bake for 20–25 minutes, or until the rice is tender and the chicken is cooked through.
Garnish and Serve: Remove from oven, garnish with chopped green onions or parsley if desired, and serve hot.
