Coconut Chicken and Rice is a comforting and flavorful dish that combines tender chicken with creamy coconut milk infused rice. Perfect for cozy dinners or special occasions, this dish offers a delightful balance of savory and tropical flavors.

For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
Salt and pepper, to taste
1 tablespoon fresh lime juice
For the Coconut Rice:
1 cup long grain white rice
1½ cups canned coconut milk (full fat for richness)
1½ cups water or chicken broth
1 tablespoon coconut oil (or olive oil)
1 small onion, diced
2 cloves garlic, minced
1 teaspoon grated fresh ginger (optional)
Salt to taste
For Garnish (Optional):
Fresh cilantro or parsley, chopped
Lime wedges
Shredded coconut, toasted
Prepare the Chicken:
In a small bowl, combine cumin, coriander, garlic powder, onion powder, paprika, salt, and pepper.
Rub the spice mixture evenly over the chicken breasts.
Drizzle with lime juice and let marinate for 10 minutes.
Cook the Chicken:
Heat olive oil in a large skillet over medium heat.
Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through.
Remove from heat and set aside.
Prepare the Coconut Rice:
In the same skillet, melt coconut oil over medium heat.
Add diced onion and sauté until translucent, about 3 minutes.
Add minced garlic and grated ginger (if using), and sauté for an additional minute.
Stir in the rice, ensuring it's well coated with the oil and aromatics.
Pour in coconut milk and water (or chicken broth), and add salt to taste.
Bring to a simmer, then reduce heat to low.
Cover and cook for 18-20 minutes, or until rice is tender and liquid is absorbed.
Serve:
Fluff the rice with a fork and transfer to serving plates.
Place the cooked chicken on top of the rice.
Garnish with chopped cilantro or parsley, lime wedges, and toasted shredded coconut.
