2 to 3 ripe bananas (about 1½ cups mashed)

¾ cup granulated sugar (can reduce to ½ cup for less sweetness)
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1½ cups all-purpose flour
Preheat Oven: Set the oven to 350°F (175°C). Grease a 4x8-inch loaf pan.
Mash Bananas: In a mixing bowl, mash the ripe bananas with a fork until smooth.
Mix Wet Ingredients: Stir the melted butter into the mashed bananas. Then, mix in the sugar, beaten egg, and vanilla extract.
Add Dry Ingredients: Sprinkle the baking soda and salt over the mixture and stir to combine. Gently fold in the flour until just incorporated; be careful not to overmix.
Bake: Pour the batter into the prepared loaf pan. Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Let the banana bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
