Full Recipe:
Fettuccine or spaghetti pasta
Olive oil
1 small onion, finely chopped
3 cloves garlic, minced
Fresh or canned salmon, flaked
Heavy cream
Fresh or frozen spinach
Lemon juice
Salt and pepper to taste
Grated Parmesan cheese
Fresh dill (optional)
Cook the Pasta: Boil a large pot of salted water. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve half a cup of pasta water before draining.
Sauté the Onion: In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until soft and translucent.
Add Garlic and Salmon: Add the minced garlic to the skillet and cook for about a minute until fragrant. Gently fold in the flaked salmon and cook for 2-3 minutes until warmed through.
Prepare the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the spinach and lemon juice. Cook until the spinach wilts if fresh, or is heated through if frozen. Season with salt and pepper to taste. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
Combine Pasta and Sauce: Add the drained pasta to the skillet with the creamy salmon sauce. Toss well to coat the pasta evenly.
Serve: Plate the pasta and sprinkle with grated Parmesan cheese. Garnish with fresh dill if desired.
