Full Recipe:
1 lb ground beef
1 can (10 oz) diced tomatoes with green chilies
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (frozen or canned)
8 oz cream cheese, cubed
1 cup shredded cheddar cheese
½ cup milk
½ tsp garlic powder
½ tsp onion powder
½ tsp ground cumin
Salt and pepper to taste
Optional: chopped jalapeños or hot sauce for heat
Brown the Ground Beef: In a large skillet over medium heat, cook the ground beef until fully browned, about 5–7 minutes. Break it apart as it cooks. Drain any excess fat.
Add Vegetables and Spices: Stir in the diced tomatoes with green chilies, black beans, and corn. Add garlic powder, onion powder, cumin, salt, and pepper. Cook for 2–3 minutes until heated through.
Incorporate Cream Cheese and Milk: Reduce heat to low. Add the cubed cream cheese and milk, stirring until the cream cheese melts and the mixture becomes smooth.
Melt the Cheddar Cheese: Gradually add the shredded cheddar cheese, stirring continuously until fully melted and the dip is creamy.
Serve and Enjoy: Serve warm with tortilla chips, crackers, or fresh veggies.
