Crock Pot Bourbon Chicken is a comforting dish that combines the rich flavors of bourbon, soy sauce, and brown sugar. Despite its name, the alcohol content cooks off during the slow cooking process, leaving behind a deliciously sweet and savory sauce. This dish is perfect for busy weeknights, as it requires minimal preparation and lets the slow cooker do all the work.
Full Recipe:
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
½ cup soy sauce
½ cup packed brown sugar
¼ cup bourbon
1 tablespoon ketchup
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon ground ginger
½ teaspoon red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
2 green onions, sliced (for garnish)
Cooked rice (for serving)
Directions
Prepare the Chicken: Place the cut chicken thighs into the crock pot
Mix the Sauce: In a bowl, combine the soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ground ginger, and red pepper flakes. Whisk until well blended.
Combine Chicken and Sauce: Pour the sauce mixture over the chicken in the crock pot. Stir to ensure the chicken is evenly coated.
Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
Thicken the Sauce: Remove the chicken from the crock pot. In a small bowl, mix the cornstarch with water to create a slurry. Pour this mixture into the sauce in the crock pot and stir. Cover and cook on high for an additional 10 minutes, or until the sauce has thickened.
Combine and Serve: Return the chicken to the crock pot and stir to coat with the thickened sauce. Serve over cooked rice and garnish with sliced green onions.
