While traditional recipes often use lamb, this version utilizes ground beef, making it both accessible and delicious. It's perfect for a cozy family dinner or meal prepping for the week ahead.
For the Meat Filling:
1 lb ground beef (85% lean)
1 small onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables (peas, carrots, corn)
1 tbsp tomato paste
1 tsp Worcestershire sauce
½ cup beef broth
1 tsp salt
½ tsp black pepper
For the Mashed Potatoes:
2 lbs potatoes (Yukon Gold or Russet), peeled and diced
3 tbsp butter
½ cup milk
½ tsp salt
¼ tsp black pepper
Prepare the Mashed Potatoes:
In a large pot, bring the diced potatoes to a boil in salted water.
Cook until fork-tender, about 15 minutes.
Drain the potatoes and return them to the pot.
Mash with butter, milk, salt, and pepper until smooth and creamy.
Set aside.
Cook the Meat Filling:
In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
Drain excess fat if necessary.
Add the diced onion and minced garlic to the skillet.
Cook until the onion is softened, about 3–4 minutes.
Stir in the tomato paste, Worcestershire sauce, beef broth, frozen mixed vegetables, salt, and pepper.
Simmer for 5 minutes, allowing the flavors to meld.
Assemble the Shepherd’s Pie:
Preheat your oven to 375°F (190°C).
Transfer the meat mixture into a 9x13-inch baking dish, spreading it evenly.
Carefully spread the mashed potatoes over the meat mixture, smoothing the top with a spatula.
For a decorative touch, use a fork to create a pattern on the mashed potatoes.
Bake:
Place the baking dish in the preheated oven.
Bake for 25–30 minutes, or until the top is golden brown and the filling is bubbling around the edges.
Serve:
Remove from the oven and let it rest for 5 minutes before serving.
