Ingredients
12 oz spiral pasta (fusilli)
2 tbsp salt (for cooking pasta)
1 cup homemade basil pesto
250 g cherry tomatoes, halved
2 cups fresh arugula
1 cup bocconcini, drained
2 tbsp mayonnaise
Garnishes:
Toasted pine nuts
Fresh basil leaves
Bring a large saucepan of water to a rolling boil. Add the salt and spiral pasta, cooking until al dente. Drain well and rinse under cold water to cool. Transfer to a large mixing bowl.
Add the basil pesto and mayonnaise to the pasta, stirring until evenly coated.
Gently fold in the halved cherry tomatoes, bocconcini, and fresh arugula.
Transfer the salad to a serving plate and garnish with toasted pine nuts and fresh basil leaves.
