This classic meatloaf is moist, flavorful, and topped with a sweet and tangy brown sugar glaze that caramelizes beautifully in the oven. Perfect for a comforting family dinner, it pairs well with mashed potatoes or roasted vegetables.
Full Recipe:
For the Meatloaf:
1 ½ pounds ground beef (or a mix of beef and pork)
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
½ cup milk
2 tablespoons Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme (optional)
½ teaspoon smoked paprika (optional)
For the Brown Sugar Glaze:
¼ cup ketchup
2 tablespoons brown sugar
1 teaspoon Dijon mustard (optional)
Preheat Oven: Preheat your oven to 350°F (175°C).
Prepare Meatloaf Mixture: In a large bowl, combine ground meat, breadcrumbs, onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, and optional spices. Mix until just combined; avoid overmixing to keep it tender.
Shape Meatloaf: Form the mixture into a loaf shape and place it in a lightly greased baking dish or on a lined baking sheet.
Make the Glaze: In a small bowl, mix ketchup, brown sugar, and Dijon mustard until smooth. Spread the glaze evenly over the top of the meatloaf.
Bake: Bake in the preheated oven for 55–65 minutes, or until the internal temperature reaches 160°F (71°C). Baste with extra glaze halfway through for a more caramelized top.
Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.
