Ingredients:
2 ripe bananas, mashed
1/2 cup of granulated sugar
1/4 cup of butter, softened
2 large eggs
1/2 cup of crushed pineapple, drained
1/2 cup of shredded coconut
1/4 cup of chopped macadamia nuts (optional)
1 3/4 cups of all-purpose flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1/2 teaspoon of vanilla extract
Directions:
Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the mashed bananas and eggs to the butter mixture and mix until smooth.
Stir in the crushed pineapple, shredded coconut, and chopped macadamia nuts.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
