1 cup salsa (plus extra for serving)
1 cup crushed tortilla chips
2 large eggs, beaten
1/2 cup finely chopped onion
1 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
Optional toppings: additional salsa, sour cream, sliced jalapeños
Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper.
Mix Ingredients: In a large bowl, combine ground beef, taco seasoning, salsa, crushed tortilla chips, beaten eggs, and chopped onion. Mix thoroughly until all ingredients are evenly distributed.
Layer the Meatloaf: Press half of the meat mixture into the bottom of the prepared loaf pan. Sprinkle with half of the shredded cheddar cheese and chopped cilantro. Top with the remaining meat mixture, pressing down firmly.
Bake: Place the loaf pan in the preheated oven and bake for 45 minutes. Remove from the oven, sprinkle the remaining cheddar cheese on top, and return to the oven. Bake for an additional 15 minutes, or until the cheese is melted and bubbly.
