1 lb ground beef
½ yellow onion, chopped
1 cup shredded carrots
3 tbsp butter
¼ cup all purpose flour
2 cloves garlic, minced
4 cups chicken broth
2 cups milk
4 russet potatoes, peeled and chopped

½ tsp pepper
2 tsp dried basil
1 tsp dried parsley
4 oz cream cheese
2 cups shredded cheddar cheese
Directions
In a large pot, cook the ground beef over medium heat until fully browned, breaking it up as it cooks. Drain the grease and set the beef aside.
