Full Recipe:
1 lb ground Italian sausage
1 tbsp olive oil
1 yellow onion, finely chopped
3 cloves garlic, minced
3 tbsp all-purpose flour
3 ½ cups chicken broth
1 cup heavy cream
1 ½ lbs baby gold potatoes, diced
½ tsp Italian seasoning
¼ tsp red pepper flakes (optional)
Salt and black pepper, to taste
2 cups chopped spinach or kale
½ cup shredded sharp cheddar cheese
In a large pot over medium heat, cook the sausage until browned, breaking it apart as it cooks. Remove and set aside.
In the same pot, add olive oil and sauté the onion until translucent, about 4–5 minutes.
Add garlic and cook for 30 seconds. Stir in the flour and cook for 1 minute
Gradually whisk in the chicken broth, ensuring no lumps form.
Add the diced potatoes, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Bring to a boil.
Reduce heat and simmer until the potatoes are tender, about 15–20 minutes.
Stir in the heavy cream, cooked sausage, chopped spinach or kale, and shredded cheddar cheese. Cook until the cheese melts and the soup is heated through.
