Chicken Florentine is a classic Italian dish that combines tender chicken breasts with a rich, creamy spinach sauce. The term "Florentine" refers to dishes that include a base of cooked spinach, a protein component, and a creamy sauce, often inspired by the culinary traditions of Florence, Italy. This dish is both elegant and comforting, making it perfect for a weeknight dinner or a special occasion.
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
1/2 cup dry white wine (or chicken broth)
1/2 cup heavy cream
2 cups fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese
1 tablespoon Italian seasoning
Prepare the Chicken: Season the chicken breasts with salt and pepper.
Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
Make the Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let the wine reduce by half, about 3-4 minutes.
Add Cream and Spinach: Stir in the heavy cream and bring to a simmer. Add the chopped spinach and cook until wilted, about 2-3 minutes.
Finish the Sauce: Stir in the grated Parmesan cheese and Italian seasoning. Cook until the sauce has thickened slightly, about 2 minutes.
Combine and Serve: Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Simmer for an additional 2-3 minutes to heat through. Serve immediately, garnished with additional Parmesan cheese if desired.
