This Crockpot Honey Garlic Chicken Thighs recipe delivers tender, juicy chicken in a rich, flavorful sauce made with honey, soy sauce, and garlic. It's a perfect weeknight meal that's both easy to prepare and satisfying.
2 to 2.5 lbs (900g–1.1kg) boneless, skinless chicken thighs
½ cup (120ml) low-sodium soy sauce
½ cup (120ml) honey
¼ cup (60ml) ketchup
3 cloves garlic, minced
1 tablespoon (15ml) rice vinegar
1 teaspoon (5g) ground ginger
1 tablespoon (8g) cornstarch (optional, for thickening)
1 tablespoon (15ml) water (for cornstarch slurry)
Salt and pepper, to taste
Toasted sesame seeds, for garnish (optional)
Chopped green onions, for garnish (optional)
Prepare the Chicken: Season the chicken thighs with salt and pepper.
Mix the Sauce: In a bowl, combine the soy sauce, honey, ketchup, minced garlic, rice vinegar, and ground ginger.
Combine in Crockpot: Place the seasoned chicken thighs in the bottom of the slow cooker. Pour the prepared sauce over the chicken, ensuring it's evenly coated.
