Full Recipe:
For the Meatloaf:
2 lbs 80% fat ground beef
1 cup white bread, torn into pieces
1/2 cup beef base (or beef broth)
2 large eggs
1 small onion, finely chopped
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 tablespoon dried parsley
Salt and pepper to taste
For the Glaze:
1/2 cup ketchup
1/4 cup brown sugar
1/2 teaspoon freshly ground black pepper
Preheat Oven: Set your oven to 375°F (190°C).
Prepare Meat Mixture: In a large bowl, combine the ground beef, torn bread pieces, beef base, eggs, chopped onion, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, dried thyme, dried parsley, salt, and pepper. Mix until just combined; avoid overmixing to ensure a tender meatloaf.
Shape the Loaf: Transfer the meat mixture to a baking sheet lined with parchment paper. Shape it into a loaf, approximately 9 inches long and 5 inches wide.
Prepare the Glaze: In a small bowl, mix together the ketchup, brown sugar, and black pepper until smooth.
Apply Glaze: Spread half of the glaze evenly over the top and sides of the meatloaf.
Bake: Place the meatloaf in the preheated oven and bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
Final Glaze: Remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 10 minutes.
Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing. Serve warm and enjoy!
