For the Biscuits:
10 biscuits (store-bought or homemade)
For the Chorizo Gravy:
2 (9-ounce) tubes of Cacique pork chorizo
½ medium white or yellow onion, finely diced
3 tablespoons all purpose flour
2½ cups whole milk
Salt and pepper, to taste
Prepare the biscuits according to package instructions or your preferred recipe.
While the biscuits are baking, heat a large sauté pan over medium high heat.
Add the chorizo to the pan, breaking it apart with a spatula.
Add the diced onion to the pan and cook for about 7 minutes, until the chorizo begins to brown.
Stir in the flour and cook for another minute, stirring occasionally.
Reduce the heat to medium-low.
Add the milk to the pan, stirring frequently.
Simmer for 5–7 minutes, until the gravy thickens.
Once the biscuits are ready, split them open and ladle the chorizo gravy over the top.
