1/4 cup coconut sugar
1 tablespoon ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 tablespoons melted coconut oil
2 large eggs
1 1/2 teaspoons vanilla extract
1 cup mashed ripe bananas (about 2 large bananas)
Preheat Oven: Set your oven to 350°F (175°C). Line a 9-inch loaf pan with parchment paper and lightly grease the sides with coconut oil.
Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, whey protein powder, coconut sugar, ground cinnamon, baking soda, and salt until well combined.
Combine Wet Ingredients: In a separate large bowl, whisk together the melted coconut oil, eggs, vanilla extract, and mashed bananas until smooth and well incorporated.
Combine Wet and Dry Mixtures: Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
Pour and Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
