1 lb ground beef
4 cups chopped potatoes (Russet or Yukon Gold recommended)
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (15 oz) diced tomatoes, undrained
1 can (10.5 oz) cream of chicken soup
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
1½ cups shredded Cheddar cheese
Optional toppings: sour cream, chopped chives
Brown the Ground Beef: In a skillet over medium heat, heat olive oil. Add chopped onion and minced garlic, sautéing until softened. Add ground beef, cooking until browned. Drain excess fat.
Prepare the Slow Cooker: Transfer the browned beef mixture to a 6-quart slow cooker.
Add Remaining Ingredients: To the slow cooker, add chopped potatoes, kidney beans, corn, diced tomatoes (with juices), cream of chicken soup, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
Cook: Cover and cook on HIGH for 3–4 hours, or on LOW for 6–8 hours, until potatoes are tender.
Add Cheese: In the last 30 minutes of cooking, sprinkle shredded Cheddar cheese over the top. Cover and allow the cheese to melt.
