1 lb (450g) boneless, skinless chicken thighs
½ cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
¼ teaspoon black pepper
Optional: red pepper flakes for added heat

In a large bowl, combine the sweet chili sauce, soy sauce, rice vinegar, vegetable oil, minced garlic, grated ginger, black pepper, and red pepper flakes (if using).
