1 lb (450g) lean ground beef (90% lean)
1 packet taco seasoning (or homemade)
¾ cup red enchilada sauce
2½ cups shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
10 corn tortillas
1 tablespoon olive oil
Preheat Oven: Set your oven to 450°F (232°C).
Cook Ground Beef: In a skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks. Once browned, stir in the taco seasoning and enchilada sauce. Simmer for a few minutes, then remove from heat.
Prepare Tortillas: Wrap the tortillas in a damp paper towel and microwave for 30–60 seconds until pliable. Brush one side of each tortilla with olive oil.
