2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon red pepper flakes (optional)
1 tablespoon sesame seeds
1 tablespoon chopped fresh cilantro (optional)
Wash and peel the cucumbers if desired. Slice them thinly and place them in a large bowl.
Peel and thinly slice the red onion. Add it to the bowl with the cucumbers.
In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, salt, and red pepper flakes until the sugar dissolves.
Pour the dressing over the cucumber and onion mixture. Toss to combine, ensuring the vegetables are evenly coated.
Let the salad sit for at least 10 minutes to allow the flavors to meld.
