Full Recipe:
3–4 boneless, skinless chicken breasts
Juice of 2 fresh limes
¼ cup extra virgin olive oil
3 cloves garlic, minced
¼ cup fresh cilantro, chopped
Salt and pepper, to taste
2 ripe avocados, sliced
Extra lime wedges, for serving
Marinate the Chicken: In a bowl, combine lime juice, olive oil, minced garlic, chopped cilantro, salt, and pepper. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes to allow flavors to meld.
Prepare the Grill or Oven: Preheat your grill to medium-high heat (around 375°F/190°C) or set your oven to broil mode. If using an oven-safe dish, lightly grease it.
Cook the Chicken: Remove chicken from marinade and discard the leftover marinade. Grill each breast for about 6–8 minutes per side until cooked through and the internal temperature reaches 165°F (75°C). Alternatively, bake in the preheated oven for about 20–25 minutes.
Slice and Serve: Allow the chicken to rest for a few minutes before slicing it into strips. While resting, slice ripe avocados into wedges. Arrange sliced chicken on plates alongside avocado wedges. Garnish with extra cilantro and serve with lime wedges for an extra burst of citrus.
