BLT Pasta Salad is a delightful twist on the classic BLT sandwich, combining crispy bacon, fresh lettuce, and juicy tomatoes with tender pasta in a creamy dressing. This dish is perfect for summer gatherings, potlucks, or a satisfying meal on its own.
8 oz. bowtie pasta
1 pint grape tomatoes, halved
¼ red onion, finely diced
2 cups fresh spinach, chopped
8 oz. bacon
¾ cup mayonnaise
¼ cup ranch dressing
2 tbsp lemon juice
½ tsp salt
¼ tsp freshly cracked black pepper
Cook the Bacon: In a large skillet over medium heat, cook the bacon until browned and crispy. Transfer to a paper towel-lined plate to drain and cool. Once cooled, chop or crumble the bacon into smaller pieces.
Prepare the Dressing: In a small bowl, whisk together the mayonnaise, ranch dressing, lemon juice, salt, and pepper. Set aside.
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 7–8 minutes. Drain the pasta and rinse briefly with cool water to cool it down, then let it drain very well.
Prepare the Vegetables: While the pasta is cooking and draining, slice the grape tomatoes in half, finely dice the red onion, and roughly chop the spinach.
Combine Ingredients: In a large bowl, combine the cooled pasta, spinach, tomatoes, onions, and dressing. Stir everything together until evenly combined and coated in dressing.
Add Bacon: Just before serving, stir in the chopped bacon.
Serve: Serve immediately or refrigerate until ready to serve.
