2 tablespoons olive oil
6 tablespoons unsalted butter, divided
4 chicken cutlets (about 1½ pounds)
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
4 large cloves garlic, minced
¼ cup packed fresh parsley leaves and tender stems, finely chopped
¼ cup finely grated Parmesan cheese
1 lemon, cut into wedges (optional)
Directions
Cook the Chicken: Heat olive oil and 2 tablespoons of butter in a large skillet over medium high heat. Season the chicken cutlets with salt and pepper. Add the chicken to the skillet and cook until golden brown on both sides and the internal temperature reaches 165°F (74°C), about 3 minutes per side. Remove the chicken from the skillet and set aside.
Prepare the Garlic Butter Sauce: In the same skillet, remove from heat and add the remaining 4 tablespoons of butter. Stir until melted, then add the minced garlic and stir until fragrant, about 1 minute.
Combine and Serve: Return the chicken to the skillet along with any accumulated juices. Add half of the chopped parsley and turn the chicken to coat. Cook for about 1 minute until heated through. Remove from heat and sprinkle with Parmesan cheese and the remaining parsley. Serve with lemon wedges on the side, if desired.
