1 lb shrimp, peeled and deveined
2 tablespoons olive oil, divided
2 cloves garlic, minced
1 teaspoon Cajun seasoning
1 medium zucchini, sliced
1 bell pepper, sliced
1 cup mushrooms, sliced
½ teaspoon salt, divided
¼ teaspoon black pepper
Optional: fresh parsley or green onions for garnish
Season Shrimp: In a bowl, toss the shrimp with 1 tablespoon of olive oil, minced garlic, Cajun seasoning, and ¼ teaspoon of salt.
