2 large chicken breasts, boneless and skinless
8 oz (225 g) pasta, such as penne or fettuccine
2 tablespoons olive oil
3 cloves garlic, minced
1 cup (240 ml) heavy cream
½ cup (120 ml) chicken broth
1 cup (100 g) grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon red pepper flakes (optional, for heat)
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped, for garnish
Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, dried basil, and oregano.
Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside to rest before slicing into thin strips.
Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
Combine: Reduce the heat to low and stir in the grated Parmesan cheese until melted and the sauce becomes smooth. Add the cooked pasta and sliced chicken to the skillet, tossing to coat evenly with the creamy sauce.
Serve: Season with additional salt, pepper, and red pepper flakes (if using) to taste. Garnish with freshly chopped parsley before serving.
