Full Recipe:
12 oz linguine pasta
1 lb boneless, skinless chicken breasts, cut into bite sized pieces
2 tablespoons olive oil
Salt and black pepper, to taste
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon smoked paprika
½ teaspoon red pepper flakes (optional, for heat)
½ cup chicken broth
½ cup heavy cream
¼ cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 teaspoon fresh thyme leaves (optional)
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the linguine according to package instructions. Drain and set aside.
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Add to the skillet and cook until golden brown and cooked through, about 5–7 minutes. Remove the chicken and set aside.
Make the Cowboy Butter Sauce:
In the same skillet, melt butter over medium heat. Add minced garlic, smoked paprika, and red pepper flakes. Sauté for 1–2 minutes until fragrant.
Add the Liquid:
Stir in chicken broth and heavy cream. Bring to a simmer and cook for 2–3 minutes until slightly thickened.
Combine Pasta and Chicken:
Return the cooked chicken to the skillet. Add the cooked linguine and toss to coat evenly with the sauce.
Finish with Cheese and Herbs:
Stir in grated Parmesan cheese, fresh parsley, and thyme (if using). Taste and adjust seasoning with salt and pepper as needed. Serve immediately.
